Apple pomace was analysed in order to determine its nutritional composition and physicochemical characteristics of starch. The dry pomace had a higher protein content (4.4 g kg(-1)), starch content (21.5 g kg(-1)) and a total dietary fibre content (22.6 g kg(-1)) than the soluble pomace (1.7 g kg(-1)). The soluble pomace had a higher total fat content (12.7 g kg(-1)) than the dry pomace (10.6 g kg(-1)). The proximate composition of pomace varied with cultivar, cultivar treatment, drying method, storage conditions and the proportion of the pomace that is dry versus the soluble fraction. The starch content varied between 12.5 and 23.3 g kg(-1) of dry pomace, corresponding to a starch content of 9.3-14.6 g kg(-1) of soluble pomace.
